20-Minute EASY Ground Turkey Tacos

Try this super easy dinner! No chopping involved!
Total Time: 20 minutes
Servings: 4
Ingredients:
- 1 tablespoon olive oil
- 1 lb ground turkey
- 1 packet taco seasoning
- 1 bag frozen bell peppers and onions
- 1 can (15 oz) black beans, rinsed and strained
- 1 can (14.5 oz) diced tomatoes
- 2 limes
- Non-fat Greek yogurt
- Your choice of tortillas (I like Siete almond flour tortillas)
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Add ground turkey to the skillet and mix in half of the taco seasoning packet. Cook until the turkey is almost done, breaking it apart with a spoon as it cooks.
3. Add the frozen bell peppers and onions to the skillet. Stir in the remaining taco seasoning. Cook until the vegetables are soft and the turkey is fully cooked.
4. While the turkey mixture is cooking, rinse and strain the black beans.
5. Once the turkey and vegetables are cooked, add the black beans and diced tomatoes to the skillet. Mix well to combine all the ingredients.
6. Cover the skillet and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
7. While the mixture simmers, toast the tortillas on a griddle or in a frying pan until warm and slightly crispy.
8. Serve the ground turkey taco mixture with a squeeze of fresh lime juice, a dollop of Greek yogurt, and your favorite hot sauce, all wrapped in the toasted tortillas.
9. Optionally, serve the tacos over white rice for a hearty meal or create taco bowls by layering the turkey mixture over rice.
10. For a baby-friendly version, prepare plain ground turkey mixed with Greek yogurt. Serve with flattened black beans and green peas on the side.
